For this tea, we started by aging our White Peony White Tea for at least 18 months. At the end of that time, the leaves were steamed to make them pliable and then pressed into brick-shaped molds. These bricks were then stored at about 35-60% humidity to slowly ferment the tea leaves. Over the years that these bricks of tea have been aging, they have developed a rich, woodsy, and naturally sweet quality to them with a smooth finish. We broke up the tea bricks into 15 gram and 2 ounce increments to make the tea easier to enjoy.
