Tea

Did you know that we use different cultivars of the tea plant for our teas? We use the traditional white tea cultivars of Da Bai and Da Hao from Fuding County, Fujian Province, which are called white tea due to the shimmering white hairs that grow on the buds and the leaves. We also use a green tea cultivar from Fuding County that the locals call "Tu Cha". This green tea varietal is a relative of the Da Bai and Da Hao varietals. We also utilize the versatile Mei Zhan cultivar from Dehua County, Fujian Province, for our Special Reserve Green Tea and our Yellow Tea.

Think of these different cultivars like different types of apples (Pink Lady, Red Delicious, Honeycrisp, etc.). Just like these different types of apples, the cultivars are all different types of the tea plant (camellia sinensis), but the leaf structure, bush structure, ideal growing conditions, etc. differ between the different cultivars of the tea plant.
