Shang's BBQ Chicken (Shan Dong Style)

BBQ chicken “Shan Dong Style” (Shan Dong is a Province in central east China)

INGREDIENTS

  • 3-5 lbs of boneless chicken

  • 1 Cup naturally brewed low sodium soy sauce.

  • ¼ - ½ cup sugar (depends on personal preference)

  • A few slices of white or yellow onion

  • A few slices of ginger

  • 1 Tbsp Chinese Five Spice (anise, fennel, cinnamon, cumin, cardamom)

METHOD

Step 1: Prepare the marinade. Mix the soy sauce with sugar, ginger, red onion, fermented tofu and Chinese five spice in a big bowl.

Step 2: Marinate the chicken. Add chicken to the marinade sauce, mix well, then cover for at least 3 hours in the fridge

Step 3: Roast in the oven. Set the oven to 425°. Once it has preheated, put the chicken in the oven for 15 minutes. After 15 minutes, set the oven to 325° and rotate the chicken so that it cooks evenly. Cook for another 15-20 minutes or until fully cooked.

Please note: Some ovens are different and might burn the surface of the chicken at 325°. For the last 15-20 minutes of roasting keep a closer eye on the chicken to make sure that it doesn’t burn.
